What can pets do at level 250?

They can do what you’ve trained them to do, fight! 😂

Evolutions are coming sometime this year. It will require level 250 and reset your pet to level 1 and change it to a completely new pet that has a new element or completely changed elements, new skills, and possibly a trait that you would find on an equipment. The skills will generally be similar to the base pets skills, with slight difference. Leveling up evolved pets will be much harder than base pets and the only way to awaken them is with awakening orbs.

Keep your elixirs? Do you mean the elixirs you gave to the pets? Yes, their stats carry over.
